Wet Kokum is a popular cooking ingredient in Southern India and is used as a substitute for tamarind in curries, vegetables, drinks, and other dishes. It is also used in Gujarati cuisine to add tangy flavor to lentils. Kokum is sweet and sour in taste and is known for its cooling properties. It is a rich source of antioxidants and has many medicinal uses according to Ayurveda. The fruit is harvested around April and May and is sundried for six to eight days, causing the rind to turn almost black.
